Insulin is not just about blood sugar control. It is a very busy hormone and affects over 100 different processes in your body, including suppressing autophagy and navy other hormones. If you raise your blood sugar by eating carbs, you not only raise your insulin to affect the carbs, but that elevated insulin also affects every other process at this heightened level, causing huge imbalances. This could be why studies have shown that aggressive blood sugar control via insulin actually increases mortality, not reduce it. You need all of these hormones and processes in balance for optimal health and autophagy, but you don't need to starve yourself from all good for this, only from carbs and sugar.
